Crispy Courgette Flowers; 'Zucchini Fritti'

Having had an abundance of courgettes and flowers in the garden this year I have made an endless supply of Zucchini Fritti, and even Tasha has mastered the art of cooking them – in fact word has it she can make better ones than me!
The batter is really simple and can be used to fry courgettes cut into match sticks or rounds, aubergines slices, pepper strips and best of all the actual courgette flowers themselves. These are best made at the last minute and I often serve them with drinks instead of a starter.
To make the batter you will need :
1/2 cup plain flour,
1/4 teaspoon bicarbonate of soda (no more or it will taste bitter)
A small handful of basil,marjoram leaves (optional)
A good pinch of salt and pepper
About 1/2-3/4 cup very cold fizzy water
Mix all the dry ingredients (except the herbs) together, then begin adding the water a little at a time until it has the consistency of single cream.
Pour some sunflower or rapeseed oil into a small saucepan until it is a third full. Heat the oil for a minute or two until it just begins to smoke . Test the temperature by dropping a few drops of the batter in the oil, it should sizzle immediately and the batter should start to crispen very quickly. Remove it from the pan using a slotted spoon.
Dip three to four flowers in the batter and gently drop them into the oil one by one, do not add too many flowers at the same time otherwise the temperature of the oil will drop and the flowers will become soggy. Cook the flowers for about 30-40 seconds till they just start to colour and carefully turn them over and cook for another 30 seconds (they should be a light golden colour). Using a slotted spoon remove them from the pan and leave to drain on kitchen paper. Cook the remaining flowers in small batches. Sprinkle with sea salt and serve immediately.

These are so amazing, I was thinking about stuffing them, cheese? herbs? what other things could I use which wouldn’t end up making it too heavy?

[…] This year I decided to plant some edible flowers to add to my kitchen garden and for a first attempt  (though I say it myself!) they have been a huge success. The flowers are a wonderful vibrant addition to the rather green look of my vegetable garden. Not only do the flowers look good but somewhat  surprisingly for something so beautiful, they pack quite a punch of flavour  too. The  hot red, orange and yellow  colours of the Nasturtium flowers have quite a peppery taste and are a delicious addition to salads. The delicate deep blue sage flowers have an even more pungent sage flavour than their leaves, and are great when sprinkled over some barbecued pork or chicken.   Lavender blue chive flowers  have a subtle onion flavour. and are a great addition to potato salad.
