This is a great simple salad to make and is really tasty (healthy as well!) but don’t let the ‘light salad’ part put you meat eaters off, as you can pimp it up with some sautèed beef, prawns or chicken and for vegetarians I sometimes add some toasted cashews nuts for extra crunch.
2 carrots peeled and cut into matchsticks
1pkt beansprouts washed
2 red peppers deseeded and cut into thin strips
2 stcks of lemon grass outer leaf removed then finely chopped
1’ peeled ginger grated
300g fillet steak
A handful of chopped mint and a handful of chopped coriander
For the dressing mix together 2tbs toasted sesame seeds with the juice of 2 limes and 1 tbs of soya sauce and 1tbs sesame oil and season with a little fish sauce to taste.
Heat a frying pan till very hot then rub a little oil over the steak, season with salt and pepper then cook for 3-4 minutes and turn over and cook for another 3-4 minutes.
The steak should be quite rare. Remove from the heat and lightly cover with foil and leave to rest for at least 10 minutes.
Mix all the other ingredients together, then thinly slice the beef and place over the salad and pour over the dressing.
